Hi guys! Thanks for tuning back into my blog. This new dish that I cooked myself for lunch yesterday doesn’t have a name yet; so feel free to comment suggestions as you read through and get an idea of what this meal is composed of.
Step 1: Put a couple tablespoons of coconut oil into a skillet. Also, add a couple teaspoons of soy sauce, a pinch of crushed sea salt, and some turmeric powder. Set the heat on medium. (Confession: I never measure anything, I just guesstimate, so season to your taste…don’t go overboard on the soy sauce though, trust me).
Step 2: Slice and dice two little to medium size squash and half of a sweet orange bell pepper. Toss the veggies in the skillet and stir them up good. After the veggies cooked by themselves for a few minutes, I tossed in some cashews and lightly salted party peanuts.
Step 3: Chop up some pre-cooked chicken breast. We get ours from the QFC deli/produce section. It’s very yummy, all grass-fed, no hormones meat. Or you can cook your own chicken breast. I personally hate touching raw meat unless I absolutely have to. But if you do cook or boil you own chicken breast, don’t season it, just leave it plain so it can soak up the other flavors in the skillet.
Step 4: Add Cinnamon. I know it sounds crazy, but mixing cinnamon and turmeric has an awesome flavor kick to it.
Step 5: Honey! That’s right folks. About 2 tablespoons of pure, local, raw honey. Maybe Honey Glazed Chicken Squash should be the title of this recipe? Thoughts?
Step 6: Set the heat on a lower medium setting and cover and let simmer, stirring occasionally. Should take less than 10 minutes for everything to absorb all the flavors. If you let it cook too long you’ll dry out the chicken and we can’t have that.
Step 7: Make a packet of Uncle Ben’s Ready rice. I prefer the Jasmine rice with this particular mix of veggies and seasonings. But feel free to use brown rice if you prefer. I’m all about cutting my cooking time whenever I can.
Step 8: Make a ring of rice on a place (the other half the of the rice just go ahead and put in Tupperware. Then fill the hole on your rice place with some of the yummy goodness you just concocted over the stove and ENJOY! It’s great that I get two meals out of this!
